Traditional Brewing Instructions
-
Measure 1 demitasse cup (approx. 2.5 oz) of cold water into your coffee pot (cezve/rakwa).
-
Add 1 heaping teaspoon of Erhib Coffee (and sugar to taste, if preferred).
-
Stir gently over low heat until the coffee dissolves and begins to warm.
-
Watch closely as a thick, rich foam begins to rise. Just before it reaches a rolling boil, remove it from the heat.
-
Pour slowly into your cup to preserve the foam layer. Let sit for 1 minute for the grounds to settle, then enjoy.
The Brewing Ritual
Brewing Turkish coffee is not a rush; it is a mindful ceremony. Follow these four timeless steps to coax out the fragrant cardamom aroma and a thick, velvety crown of crema (al-wajh).
The Cold Water
Measure cold, filtered water using your traditional finjan (espresso demitasse cup). Pour into your copper rakwah or cezve (approx. 60–75 ml per serving).
The Erhib Measure
Add 1 heaping teaspoon (around 7–8g) of Erhib Turkish Coffee per cup. Add sugar now if desired (none, medium, or sweet). Stir gently just once to blend.
Gentle Low Heat
Place the pot over low heat. Do not stir again. Allow the coffee to warm slowly so the cardamom blossoms and a thick dark foam begins to form on top.
The Crema (Wajh)
Just as the foam rises towards the rim, remove from heat immediately before boiling. Spoon the foam evenly into each finjan, then slowly pour the coffee down the side.
